Coffee BBQ Spiced Short Ribs with Crispy Onion Haystack

INGREDIENTS

Short Ribs Ingredients

  • 2- 6oz pieces Sterling Silver short ribs, bone-in
  • 2 tsp. Kosher salt
  • 1 tsp. fresh cracked black pepper
  • 2 Tbsp. ground coffee
  • 2 Tbsp. BBQ spice blend
  • 2 Tbsp. vegetable oil
  • 3 cups brewed coffee
  • 2 cups BBQ sauce

Onion Haystack Ingredients

  • 1 cup yellow onion, sliced thin
  • 1 tsp. Kosher salt
  • 2 cups vegetable oil for frying
  • 1 cup all-purpose flour
  • 1 Tbsp. BBQ spice blend

Short Ribs Preparation

  1. Preheat oven to 350°.
  2. In a small bowl, combine salt, pepper, ground coffee, and BBQ spice blend. Mix to combine.
  3. Liberally season short ribs with spice blend and press to adhere.
  4. Heat oil in a heavy bottomed pan over high heat. Add seasoned short ribs and sear on all sides until well browned.
  5. Mix together brewed coffee and BBQ sauce and add to pan with short ribs.
  6. Cover with a tight-fitting lid or aluminum foil and cook for approximately 3 hours, or until tender.
  7. Once cooked, remove short ribs from pan and reduce liquid until thickened.
  8. Add short ribs back to pan and coat with sauce.

Onion Haystack Preparation

  1. In a small bowl, combine onions and salt and let stand for 30 minutes.
  2. In a heavy bottomed pot, heat oil to 350°.
  3. Toss salted onions with flour and shake off excess.
  4. Add to oil and cook for 3 minutes, or until golden brown and crispy.
  5. Remove and place on a paper towel lined plate.
  6. Season with BBQ spice blend and serve atop short ribs.
