As owner of The Root Cellar Cafe & Catering since 2013, she’s been serving up comforting favourites like her cranberry-braised short ribs over beds of garlic mashed potatoes and brussels sprouts.

This dish provides a modern twist on classic steakhouse fare. These short ribs can be braised based on seasonal influences – in this case, cranberry and a collection of fresh herbs. Then, the protein can be served right on top of more traditional mashed potatoes with the braising juices acting as a gravy.

Chef Dave has been a Signature Chef for nearly 15 years, and his talents have been showcased both locally and nationally in contests, magazine features, publications, food shows, and television broadcasts. Now, he brings a wealth of experience to The Roost in Durango, Colorado – and serves up dishes like Brazilian seared skirt steak with braised greens.

This dish delivers the hardiness of a traditional steakhouse entrée, but with more contemporary sides and flavours. The skirt steak is prepared with an ancho chili pepper rub before being seared with butter, garlic, and onion, and served alongside braised greens, black bean purée, and basmati rice.
