Chef Yannick Montplaisir has been a Sterling Silver Signature Chef since 2023, valuing quality and notoriety in cuts of beef. When it comes to where he gets culinary inspiration: “A lot in my head. In a different era, I spent a lot of time in the library when it was time to create a menu or add something new to my must-haves. Now, of course, the internet.”
When he’s not in the kitchen, Chef Yannick is cooking at home, playing with his sons, enjoying video games, reading philosophy and touring public markets. “I am really passionate of politics so I read, listen to and consult everything that is done or said in the Canadian and Quebec parliament.”
I believe that every ounce of love and attention given to a recipe is ultimately reflected in the plate and its taste.
How Have Customer Expectations Changed Recently?
“In my opinion, the leisure dollar has more value today to customers in an inflationary environment, so they have an apprehension of having an evening that meets their expectations and their budget. In the kitchen, lesser-known cuts have become more popular such as the cheek. Tartars have also evolved a lot.”What New Flavors are You Experimenting With?
