Korean Boneless Short Rib Bulgogi Lettuce Wraps

INGREDIENTS

Korean Marinated Short Ribs

  • 1 lb. well-marbled, Sterling Silver Premium Beef Boneless Short Ribs

Marinade

  • 4 large garlic cloves
  • 1 cup peeled, chopped ripe Asian or Bosc pear
  • ¾ cup finely chopped onion
  • 1 tsp. finely chopped ginger
  • 1 scallion, chopped
  • 2 Tbsp. soy sauce
  • 1 Tbsp. roasted sesame oil
  • 1 Tbsp. light brown sugar 
  • ½ tsp. black pepper
  • ½ tsp. sesame seeds, toasted

Korean BBQ Sauce

  • 2 Tbsp. Sriracha
  • 2 Tbsp. sesame oil
  • 1 cup soy sauce
  • 1 Tbsp. garlic
  • ¼ cup rice wine vinegar
  • ¼ cup hoisin
  • ⅛ cup oyster sauce
  • 2 payday, chopped up

Spicy Pickled Cucumbers

  • 1 red onion, sliced very thin
  • 2 cucumbers, sliced thin
  • 4 cups apple cider vinegar
  • 2 cups sugar
  • 3 Tbsp. salt
  • 1 Tbsp. chili powder

Garnishes

  • Spicy pickled cucumbers
  • Bibb lettuce (shingled)
  • Daikon radishes
  • Toasted cashews (julienned)

Assembly

  • On a platter, place cooked short ribs with Korean BBQ Sauce on ribs.
  • On the side, add Spicy Pickled Cucumbers, shingled Bibb lettuces, daikon radishes and julienned toasted cashews. Each person makes his or her own lettuce wrap.

Short ribs Preparation

  1. Wrap beef in plastic wrap or butcher paper and place in freezer for 1 to 2 hours to firm up.
  2. Cut beef across the grain into thin slices. If cooking in skillet, slices should be less than ⅛-inch thick; do not worry if they are a bit ragged. If cooking on grill, uniform slices, ⅛-inch thick, are best.

MARINADE Preparation

  1. In food processor, combine garlic, pears, onions and ginger and process until very smooth and creamy, about 1 minute.
  2. In bowl or sealable plastic bag, combine short ribs, marinade, scallions, soy sauce, sesame oil, brown sugar and pepper and mix well. Cover or seal; then refrigerate at least 30 minutes or overnight.

GRILLING Preparation

  1. When ready to cook and serve, prepare garnishes. Lettuce leaves should be mounded in large basket or platter; small dishes can hold remaining garnishes. Keep vegetables cold.
  2. If using grill, heat to high. Working in batches if necessary, place sliced meat on grill and cook, turning often, just until cooked through and browned, about 2 minutes. Sprinkle with sesame seeds.

Korean BBQ Sauce Preparation

  1. Mix all in sauce pot, bring to boil and simmer until payday melts. Set aside.

Spicy Pickled Cucumbers Preparation

  1. Mix all ingredients; let sit for 30 minutes before serving.
