3 to 4 lbs Sterling Silver Boneless Beef Round Rump Roast or Beef Bottom Round Roast
2 teaspoons dried basil
2 teaspoons garlic powder
2 teaspoons dried thyme
1 teaspoon coarsely ground black pepper
2 teaspoons kosher salt
Preheat oven to 325°F.
Combine rub ingredients; press onto beef roast.
Place roast on rack in shallow roasting pan. Insert ovenproof meat thermometer so tip is centered in thickest part of beef. Do not add water or cover. Roast in 325°F oven 1½ to 2 hours for medium-rare doneness (do not overcook).
Remove roast when meat thermometer registers 125°F F for medium-rare.
Let stand 15 minutes. Temperature will rise to 135°F F for medium-rare.
