TERIYAKI MARINATED STERLING SILVER® PREMIUM BEEF TENDERLOIN SUSHI ROLL WITH ASIAN DIPPING SAUCE BY CHEF DAVE CUNTZ

DIFFICULTY LEVEL: Intermediate

INGREDIENTS

  • 2 pounds cleaned center cut Sterling Silver® Premium Meats beef tenderloin (sliced and rolled out, then lightly pounded with a mallet)
  • 4 cups sushi rice

MARINADE

  • 1 tablespoon garlic, minced
  • 4 cups soy
  • 1 cup pineapple juice
  • 1 cups brown sugar
  • 2 tablespoons fresh ginger, minced
  • 1/2 cup lemon juice

ASIAN DIPPING SAUCE

  • 1 ounce garlic (minced)
  • 2 cup oyster sauce
  • 2 cup hoisin sauce
  • 2 cup sweet chili sauce
  • 1 cup rice wine vinegar
  • 1 tablespoon ginger powder
  • 1/2 tablespoon cayenne
  • 1/2 cup lime juice
  • 1/2 cup soy

Sushi Roll Instructions

  1. Heat all ingredients together, let cool.Ensure the steak is cooked until its internal temperature reaches 145°F as determined by an instant-read meat thermometer for medium doneness.
  2. Take beef tenderloin and marinate for at least 2 hours up to over night.
  3. Blanch off one bunch of medium Asparagus. Cool and toss with some sesame oil, salt and pepper.
  4. Cook of 4 cups of sushi rice, mix 1/4 cup mirin. Wait until cool to roll.

Sushi Assembly

  1. Place beef tenderloin on sushi rolling pad, add some sushi rice, place 4 pieces asparagus and roll.
  2. Set aside finished sushi roll.
  3. Repeat till all beef has been rolled.

Asian Dipping Sauce

  1. Add all ingredients to a mixing bowl and whisk together.
  2. To serve, cut sushi into 3/4 inch pieces, serve with Asian dipping sauce.
